WELL Q50
WELL Q50
Introduction
Cane Juice is a medium for the growth of a wide varieties of microorganisms. It comes in direct contact with microorganisms attached to metal and concrete surfaces. These microorganisms excrete enzyme which causes the inversion of sucrose. This sucrose inversion is considered as one of the largest economic losses in the production of sugar. The loss of sucrose due to inversion can represent one of the largest economic losses in the manufacture of cane sugar. Much of this loss. however, can be prevented by the use WELL Q 50 as an effective and low cost biocide of the grinding and processing of the cane. The cane juice has a nature acidity, but the practice of limining to neutrality within a few minutes of juice extration reduces the amout of sucrose inversion caused by this acidity. In addition, the normal temperature of cane juice when freshly extracted is low enough so that inversion caused by heat is usually sight. Therefore since the acidity and temperature of cane juice are normally about optimum for minimum inversion, the etfect of invertase must be considered a major factor in inversion lisses. Invertase in enzyme that acts as a catalyst to accelerate the inversion reaction. The invertase in cane juice come's from microorganisms. Destruction of invertase requires exposure to high heat over a period of time. However, only 50 percent of its activity is destroyed in 1 hour at 65 ºC, and heating accelerates the inversion of sugar and thus causes a loss in the sucrose content.
